Pizza Salad
Treat yourself to the easiest weekday lunch!
Beans get simmered in garlic, onions get a quick pickling, tomatoes are roasted with hot chili honey, croutons are made in oven, and then it all gets tossed together to create a salad for your senses.
We would never say to replace pizza with salad. Never ever. Pizza is a meal made in heaven. But there are times when we may be looking for something lighter and low in carbs, but with all the umami flavors.
Inspired by #Jennys_Kitchen, we went ahead and made a pizza salad for lunch.
Toss together the following:
Cannellini beans simmered with garlic
Roasted cherry tomatoes
Toss with 2 tbsp olive oil
1 TBSP chili honey
Salt & pepper to taste
Roast until blistered and set aside to cool
Quick pickled red onions
1/4 red onion
pinch of oregano
2 TBSP red wine vinegar
Marinate while preparing rest of salad
Salad base
Kale (chopped and massaged with olive oil and salt first)
BUF Ciliegine
Kalamata olives
Parsley
Croutons made with leftover sourdough bread, olive oil, salt, and pepper
