Buf Banh Mi Sandwich

Ingredients

  • 1 package Būf mozzarella (Ciliegine balls or Ovoline)

  • 1 baguette

  • 2 jalapeños, thinly sliced

  • 1 cucumber, thinly sliced

  • 1 handful quick-pickled carrot,

  • daikon or radish & onion

  • mayonnaise

  • sriracha

  • fresh cilantro and/or fresh mint

Instructions

1. Split the baguette in half lengthwise. Make sure the crust is not too crusty and remove some of the dough inside. Lightly toast under a broiler to warm it up. 2. Layer ingredients, starting with mayonnaise, followed by BUF mozzarella, cucumber, jalapeños, and quick-pickled veggies. Finish with fresh herbs, and then drizzle with srirarcha to taste. Quick-Pickled Veggies Rice vinegar Water Sugar Carrot, thinly sliced Daikon or raddish, thinly sliced Onion, thinly sliced 1. Place rice vinegar, water, and sugar into a saucepan over medium heat, bring to a boil, and stir until the sugar has dissolved, about 1 minute. Allow the mixture to cool. 2. Pour the cooled vinegar mixture over the carrot, radish, and onion in a bowl, and allow to stand for at least 30 minutes. Drain off the excess vinegar mixture after the vegetables have marinated.
